'I’m a chef, food writer, food stylist and cookery teacher living by the coast on the Devon–Dorset border. Since I was a boy, I’ve been inspired by the natural world - the changing light, the weather, the hedgerows and the shoreline. Learning to cook deepened that connection, drawing me closer to the land and the sea, the rhythm of the seasons, and the farmers, growers and fishermen who live and work around me. Through my cooking and recipes, I hope to encourage people to think a little more about how their food is produced, where it comes from, and the impact our food choices might have on the world around us. Simple, honest ingredients and a respect for where they come from remain at the heart of everything I do.
I was the head chef at River Cottage for over 15 years, and I still work closely with Hugh Fearnley-Whittingstall and the team at Park Farm. My time cooking at River Cottage was formative, giving me the opportunity to learn from an extraordinary community of cooks, foragers, butchers and farmers, helping me to shape my own philosophy of food, one rooted in seasonality, sustainability, and a genuine appreciation for good produce treated with care.
Although I’m based in Southern England, my life in food takes me all around the world. I teach cookery, collaborate with restaurants and hold dining events in all sorts of places. Keep half an eye on my Suppers and Events page to find out what I’m up to next.
I regularly write for a variety of publications and have published numerous books on seasonal cooking, which have all been well received. Alongside my writing and food styling, I work with a number of brands who share my values and outlook. I consult, develop recipes, and create content, always aiming to keep the work grounded, authentic and true to my ethos.

This site is always evolving. As its roots settle and it begins to grow, you may notice changes along the way. Like anything organic, it will find its own pace and rhythm.
At heart, this is a place to share my love of food and cooking, along with other thoughts and ideas. Through recipes, stories, and writing, and through the objects you’ll find in the shop, I hope to offer something grounded, something that feels genuine, and perhaps a little nourishing.
