Recipes

Welcome to my recipes

There are getting on for 1000 in this collection. They’re all simple, seasonal and very achievable, whether you’re cooking something quick and light or settling in for something slow and comforting. The recipes here reflect the way I cook at home and the way I like to eat; they are very much shaped by the seasons and by the ingredients themselves.

To help you find your way around my recipes, use the search bar below, it allows you to explore the recipes in whatever way suits you. You can choose a season, select a course, or search by recipe type. With so many here, it's a good way to make browsing easier and more intuitive. Many of the following recipes are accompanied by video, so you can cook along or just get a sense of the dish before you begin.

Brill with anchovies, cream and rosemary

Brill with anchovies, cream and rosemary

It’s difficult to explain just how tasty this sauce is and how well it works with a firm, well flavoured fish like brill. It’s quick to make too, so once...
Sea bass with butter beans, ham and parsley

Sea bass with butter beans, ham and parsley

This combination of creamy butter beans, rich salty Iberico ham, fresh herbs and pan fried fish is one I come back to time and time again. It’s a simple, quick supper...

Cold roast chicken with early new potatoes, baby beetroot, eggs, anchovies and chives

Hot smoked trout

Hot smoked trout

I’m a big fan of this versatile freshwater farmed fish. It offers a welcome alternative to farmed salmon. Because it’s usually raised in closed systems, it can have fewer environmental...
Meringue with lemon curd, cream, hazelnuts, primroses and sorrel

Meringue with lemon curd, cream, hazelnuts, primroses and sorrel

This pretty Easter pavlova really makes the most of good free range eggs. Crisp and sweet, pillowy meringue generously topped with sharp, fragrant lemon curd. If you have primroses in...

Chard, leek and white bean soup with herbs and olive oil

I’m a big fan of soups that make you feel you’ve eaten well.

Gooseberry pudding cake with saffron, honey and vanilla custard

Gooseberry pudding cake with saffron, honey and vanilla custard

This recipe turns a few generous handfuls of gooseberries into a proper pudding. I like to call it a pudding cake. Some of the fruit is gently cooked with saffron...
Grilled scallops with chorizo and wild garlic

Grilled scallops with chorizo and wild garlic

Scallops like to be cooked quickly and over a very high heat. Here they’re cooked under a fierce grill so the shells heat up fast and the scallops take on...
Venison terrine with orange, prunes and juniper

Venison terrine with orange, prunes and juniper

This rich, deeply savoury terrine pairs venison with sweet prunes, fragrant orange zest and a few warming spices. The bacon keeps everything tender while the venison loin running through the...
Slow cooked squid with white beans, bacon and lemon

Slow cooked squid with white beans, bacon and lemon

Dried beans, smoked bacon and good tinned tomatoes form the backbone of this deeply comforting slow cooked dish. I like to add squid too. It might sound unusual, but squid...
Lobster spaghetti with samphire and sheep’s cheese

Lobster spaghetti with samphire and sheep’s cheese

A single lobster rarely stretches very far, particularly the modest ones I’m lucky enough to get from the bay. Buying several would certainly feed a family, but it would also...
Warm new potato salad with fried onions, garlic, chives, parsley and blue cheese

Warm new potato salad with fried onions, garlic, chives, parsley and blue cheese

Freshly dug, freshly boiled, buttered new potatoes are among the most delightful things we can hope to eat in early summer. I’m not sure anything else quite equals them. The...
