Recipes

Welcome to my recipes

There are getting on for 1000 in this collection. They’re all simple, seasonal and very achievable, whether you’re cooking something quick and light or settling in for something slow and comforting. The recipes here reflect the way I cook at home and the way I like to eat; they are very much shaped by the seasons and by the ingredients themselves.

To help you find your way around my recipes, use the search bar below, it allows you to explore the recipes in whatever way suits you. You can choose a season, select a course, or search by recipe type. With so many here, it's a good way to make browsing easier and more intuitive. Many of the following recipes are accompanied by video, so you can cook along or just get a sense of the dish before you begin.

Venison and bacon stew with orange and bay

Venison and bacon stew with orange and bay

Venison makes wonderful stews, particularly when you use meat from the shoulder as it responds beautifully to slow cooking. The meat is rich, dark and deeply flavoured but naturally quite...
Lemon and bay possets

Lemon and bay possets

These little possets make a lovely pudding to take along on any excursion. Lemon is the classic flavour, but I like to add a few fresh bay leaves too. We...
Asparagus, spring onion, goat’s cheese, tarragon and parsley tart

Asparagus, spring onion, goat’s cheese, tarragon and parsley tart

Rabbit and pig’s trotter terrine with whole grain mustard and parsley

Crab and asparagus salad

Crab and asparagus salad

This is a lovely way to celebrate fresh asparagus when it’s at its best. Cooking the spears over glowing embers gives them a gentle smokiness and a little char, which...
Roast chicken with new potatoes, asparagus and garden herbs

Roast chicken with new potatoes, asparagus and garden herbs

This is the sort of thing I cook when the garden is beginning to wake up again. The chicken roasts over scrubbed new potatoes, while asparagus and handfuls of bright...
Mussels with sea beet, bacon and cider

Mussels with sea beet, bacon and cider

Sweet mussels, smoky bacon and wild sea beet make a beautiful combination. The cider brings a gentle acidity that lifts the richness of the cream, while sea beet (or spinach)...
Courgette, goats’ cheese and dill soufflé

Courgette, goats’ cheese and dill soufflé

Cooking courgettes long and slow like this might seem unusual, but what you end up with is pure magic. They become beautifully soft, rich and comforting and can be used...
Blueberry, honey and lavender mess

Blueberry, honey and lavender mess

This combination might seem unlikely, but it works very well. It’s just the delicate purple petals from the lavender flowers that you use, and early summer is the time to...
Baked eggs

Baked eggs

A simple little pan of baked eggs, rich with cream and smoky bacon, scented with thyme and a little marjoram if you have it. Perfect with a few rounds of...
Warm eggs mayonnaise with spicy chorizo, rosemary and garlic

Warm eggs mayonnaise with spicy chorizo, rosemary and garlic

This is a lovely twist on a classic eggs mayonnaise. The eggs are mixed with a rich homemade mayonnaise and piled onto hot toast, then finished with crisp chorizo, garlic...

Barbecued sole with parsley lemon and garlic
