There are getting on for 1000 in this collection. They’re all simple, seasonal and very achievable, whether you’re cooking something quick and light or settling in for something slow and comforting. The recipes here reflect the way I cook at home and the way I like to eat; they are very much shaped by the seasons and by the ingredients themselves.

This quick and scrumptious salad with crunchy radish, sharp apples and the toothsome bite of poppy seeds showcases crayfish beautifully
Grilled squid with broad beans, mint, lemon & agretti
a frondy member of the samphire family, and although it has a slight salinity, its flavour is close to that of spinach
Gooseberry, bacon & camembert rough-edged tart
Here, I use ripe gooseberries just as you would cherry tomatoes (they have very similar qualities) with Camembert and salty bacon
Pickled cucumbers with dill & oak
Try to find fresh little cucumbers that smell sweet and are firm to the touch, as these will give you pickles with the best flavour
