There are getting on for 1000 in this collection. They’re all simple, seasonal and very achievable, whether you’re cooking something quick and light or settling in for something slow and comforting. The recipes here reflect the way I cook at home and the way I like to eat; they are very much shaped by the seasons and by the ingredients themselves.

There’s so much more to the beautiful oyster than a brief sensual swallow. A cooked oyster, whether it’s crisply fried, gently poached or cooked slowly in a pie, can be just as exciting

This dish combines a handful of big flavours that all complement the broccoli beautifully. Everyone who’s tasted this dish has gone back for more
Roast bream with artichokes, onions, smoked bacon & thyme
Last night I cooked this dish using black bream. It was probably one of the most delicious ‘all-in-one’ recipes I’ve made for years

This recipe is gentle and warming and perfect for those slower, darker nights at home
