Recipes

Welcome to my recipes. There are over 1,000 in this collection. They’re all simple, seasonal and very achievable, whether you’re cooking something quick and light or settling in for something slow and comforting. The recipes here reflect the way I cook at home and the way I like to eat; they are very much shaped by the seasons and by the ingredients themselves.

Chard, leek and white bean soup with herbs and olive oil

I’m a big fan of soups that make you feel you’ve eaten well.

Gooseberry pudding cake with saffron, honey and vanilla custard

Gooseberry pudding cake with saffron, honey and vanilla custard

This recipe turns a few generous handfuls of gooseberries into a proper pudding. I like to call it a pudding cake. Some of the fruit is gently cooked with saffron...
Grilled scallops with chorizo and wild garlic

Grilled scallops with chorizo and wild garlic

Scallops like to be cooked quickly and over a very high heat. Here they’re cooked under a fierce grill so the shells heat up fast and the scallops take on...
Venison terrine with orange, prunes and juniper

Venison terrine with orange, prunes and juniper

This rich, deeply savoury terrine pairs venison with sweet prunes, fragrant orange zest and a few warming spices. The bacon keeps everything tender while the venison loin running through the...
Barbecued rack of lamb with broad beans, peas and lovage

Barbecued rack of lamb with broad beans, peas and lovage

There are few things more satisfying than lamb cooked over a crackling wood fire. The heat crisps the fat and colours the meat beautifully, while the smoke adds a gentle...
Slow cooked squid with white beans, bacon and lemon

Slow cooked squid with white beans, bacon and lemon

Lobster spaghetti with samphire and sheep’s cheese

Lemon and bay possets

Lemon and bay possets

These little possets make a lovely pudding to take along on any excursion. Lemon is the classic flavour, but I like to add a few fresh bay leaves too. We...

Asparagus, spring onion, goat’s cheese, tarragon and parsley tart

Rabbit and pig’s trotter terrine with whole grain mustard and parsley

Rabbit and pig’s trotter terrine with whole grain mustard and parsley

Rabbit is delicious, sustainable, economical and easy to cook, and in my view far more interesting than chicken. It has a gentle gamey flavour that works beautifully in slow cooked...
