There are getting on for 1000 in this collection. They’re all simple, seasonal and very achievable, whether you’re cooking something quick and light or settling in for something slow and comforting. The recipes here reflect the way I cook at home and the way I like to eat; they are very much shaped by the seasons and by the ingredients themselves.

Many of the following recipes are accompanied by video, so you can cook along or just get a sense of the dish before you begin.
Smoked haddock & chard toasts
I’m not really sure how to describe this. It’s not a rarebit, it’s not a croque of any sort either, and it certainly pushes the boundaries of cheese on toast
Autumn wild mushroom & sausage chachouka
Wild mushrooms are certainly not essential here. You can use firm little chestnut mushrooms or large Portobello, or any variety you like
Mushrooms baked on toast with garden herbs, butter & garlic
Everything goes into the one tray and gets popped in the oven to bake – it’s completely fuss-less
Peaches with sage, smoked bacon & honey
Fruits that are sweet, floral and fleshy are made for bacon, especially smoked bacon
Blackcurrant jam
This is the jam my mum made, and her mum before her. And that’s what’s so good about jam – time doesn’t change it
A simple sourdough
Making a loaf of bread is one of the oldest, simplest forms of cookery, and quite often it can be one of the most rewarding

When it comes to wonderful breakfasts, this is up there with some of my favourites

Granola is easy to make, packed full of healthy, nutritious things and really, really tasty
Potato & wild garlic flat breads with fried eggs & olive oil
These potato flat breads are soft, tender and full of character, and make a somewhat unconventional alternative to toast in the morning
Nettle omelette
Although you could fill this omelette with grated Cheddar cheese or some fried mushrooms, I like this version, with stinging nettles
